Chinese Cabbage & Potatoes

3 large potatoes, peeled                              
and halved
1/2 medium onion,sliced                            
1 lb. chinese cabbage (napa),sliced            
1 (5oz) can evaporated                              
low-fat milk                                              
                                                                
prep time: 20 min   cook time: 35 min  

1. in  large saucepan or dutch oven cook potatoes and onion, covered, in boiling water for 20 min.  
2. add cabbage to pan, add a little water if necessary cook until cabbage is tender; drain.
3. warm milk.
4. spoon potatoes mixture into bowl and mash, beat in milk; season to taste with salt and pepper ( if dish needs to be held for a few minutes, return whole mixture to the large pan and keep warm over a very low heat.
